Italian Spinach Sausage Pie

1 pound bulk Italian sausage

 6 eggs

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry or fresh

 5 cups shredded cheese

 3/4 cup ricotta cheese

 1/2 teaspoon salt

 1/8 teaspoon garlic powder

 1/8 teaspoon ground black pepper

1 double crust ready-to-use pie crust

 1 tablespoon water

Preheat oven to 375 degrees F (190 degrees C).

Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain excess grease. Separate one egg and set yolk aside; beat egg white and remaining eggs in a bowl. Fold spinach, mozzarella cheese, ricotta cheese, salt, garlic powder, pepper, and sausage into eggs. Line a 10-inch pie plate with bottom pastry; pour filling into crust. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal, and flute edges; cut slits in pastry. Beat water and remaining egg yolk in a small bowl; brush the mixture over top of pie. Bake in preheated oven until crust is golden and filling is bubbly, 50 to 60 minutes. Let stand 10 minutes before cutting.

I dont like the spinach so i left it out and i also made them into mini pies.

Taco Soup

1 lb ground turkey breast

1 large onion (chopped)

1 (1 1/4 ounce) package hidden valley ranch dressing mix

1 (1 1/4 ounce) package taco seasoning mix

1 (15 ounce) can pinto beans

1 (15 ounce) can hot chili beans

1 (15 ounce) can whole kernel corn

1 (15 ounce) can stewed tomatoes (Mexican flavor)

1 (15 ounce) can stewed tomatoes (any flavor)

Brown the meat and onions and drain. Mix ranch dressing mix and taco seasoning mix into the meat into a soup pot. Without draining, add all other ingredients. Simmer 1 hour. OR add it to a crock-pot and cook for at-least an hour until your ready to eat it.

It's good with corn chips and a pinch of cheese!

This is a weight watchers recipe that my aunt gave me and man is it AMAZING and low calorie!

30 Min Meal Enchiladas

10 min prep time, 20 min cook time

2 - 12.5 oz can chunky chicken

1 – 10 oz can red sauce (mild or hot)

1 – 10 oz can green sauce (mild or hot)

1 – 10 oz cream of chicken

3/4  taco packet (unless you like it spicy then add whole packet)

11flour (small tortilla)

1 cup cheese

Square cake pan

Preheat oven to 425

Add the chicken, 3/4 taco packet, half the green sauce, and half the cream of chicken in a bowl and mix. Then fill each tortilla with 2 TBL spoons of mixture till all 11 tortillas are filled. Lay them in your pan. Next we make the top sauce by mixing the remaining chicken mixture, all the red sauce, rest of green, and cream of chicken. Mix well and microwave for 1 min then pour evenly over enchiladas then cover top with cheese. Olives are optional! Cook for at least 20 min or until the sauce is boiling in them.

Best with re-fried beans and Spanish rice!

I love this!! So one night we got home supper late and mom had me make dinner. I wanted to make enchiladas so bad but my favorite recipe that i normally use took forever!! So i revamped it and came up with a 30 minute meal version of it and boy did i hit the mark on this one! Its so good but don't take my word for it try it yourself!!  Now some may say this isn't a real enchilada because it doesn't corn tortilla but i really don't like the taste of them but if you have to have them its vary simple! All you do it use the corn and add another 15 min to your time.
